Sweet couscous seffa.


  • 750 grams of medium-sized couscous
  • 3 tablespoons of table oil
  • a small spoon of salt
  • 0.5 liters of boiling water
  • 250 grams of butter
  • 150 grams of powdered sugar
  • 1/4 litre Milk
  • For decoration:
  • Ground cinnamon
  • Boiled almonds, peeled, fried and ground
  • Dried fruits
  • Yoghurt and orange blossom.


1- In a bowl, put the couscous, salt, then Pour boiling water (the water should cover the surface of the couscous) cover, and let stand 10 minutes.

2- After soaking. toss with 3 tablespoon vegetable oil,so that it detaches its grains with circular movements by hand and puts them in couscous (pot) Steam (cooked) for 30 minutes, then remove it from the heat, empty it in a large saucepan, wrap it again, sprinkle it with cold water and put it back in couscous to simmer for the second time for a quarter of an hour.

3- Remove saucepan from the heat and put it in a large bowl and immediately add the butter in it and start mixing it untill melt completely , then we add the sugar, cinnamon, and add enough milk to moisten the couscousand mix the ingredients well.

4- To serve,We put the couscous in a serving dish and garnish it with cinnamon, almonds, powdered sugar,dried fruits, yoghurt and orange blossom.
