Bessara is a rich soup made from dried chickpeas or crushed dried beans, it is  simmered in water with some vegatabls,spices and olive oil, It is served warm in individual bowls or deep plates with barley bread or wheat bread for dunking or scooping. commonly served with olive oil, a sprinkle of cumin and  harissa. Bessara is often served in breakfast.
 It is a recipe for the winter season par excellence due to its high nutritional value, it provides the body with warmth, energy, and resistance to some diseases, especially chest diseases, heart, Arteries, and Cholesterol.

INGREDIENTS

  • 1 lb  dried fava beans
  • 3 cloves garlic, crushed
  • 5 cups of water
  • 1/3 cup olive oil
  • Juice of 1 lemon
  • 1 teaspoons salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon  cayenne pepper
  • 1 white onion, chopped
  • Chopped parsley to garnish

INSTRUCTIONS

  • In a medium-sized pot, cook the onions and garlic in the olive oil over medium-low heat for just a few minutes. Add the fava beans and the remaining ingredients .cover with a generous amount of water. and bring to a boil over high heat.then reduce the heat to medium and simmer the beans until tender, one hour or longer. Stir occasionally while cooking
  • Using a blender , blend the soup until it gain over a smooth texture.
  • Return the soup to the pot and reheat over low. If the soup is too thick, add a bit of water to thin it out.
  • Add with salt and crushed black pepper to taste.
  • Serve hot with olive oil, a sprinkle of cumin and cayenne pepper , chopped cilantro or parsley.
