Lentil soup is a healthy vegetarian dish also is the main meal that consumed especially in the winter due to its nutritional value and it gives a sense of energy and warmth. or could be easily served as side dishes during Ramadan Iftar.

Ingredients :
  •  Red lentils: a cup and a half
  •  olive oil: 5 tbsp
  •  Water: 7 cups (hot)
  •  Onion: 1 grain (finely chopped)
  •  Carrots: 1 grain (peeled)
  •  Potatoes: 1 grain (peeled)
  • Tomato: 2 grains
  •  Garlic: 4 cloves (mashed)
  •  Tomato puree: 2 tbsp
  •  Cummins: a teaspoon
  •  Salt: half a teaspoon
  • Pepper: half a teaspoon
  • Green coriander: 2 tbsp
  •   Parsley: a large spoon   
  • Turmeric: half a teaspoon


Directions :

First, clean the lentils and wash it, then put it in a pressure cooker or a cooking pot, add the onion, then peel the tomato, remove the seeds,  add the garlic,  the tomato puree, the oil, salt, pepper, Potatoes,  grated carrots, turmeric, and cumin,  add the water, and let it cook on a slow heat for about 20 minutes until the lentils are soft.
once the lentils are done, add the coriander and parsley and serve with Moroccan bread and salad.
